Ingredients:
1 1/2 cups Arborio rice
4 cups chicken or vegetable broth
1 cup dry white wine
1 small onion, finely chopped
2 tablespoons butter
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Steps:
In a pot, warm the broth over low heat.
In a separate pan, sauté the onion in butter until translucent.
Add the Arborio rice and toast it briefly.
Pour in the wine and stir until absorbed.
Gradually add the warm broth, one ladle at a time, stirring constantly until the rice is creamy and tender.
Stir in the Parmesan cheese, season with salt and pepper, and serve
