Adana Kebab originates from the city of Adana in southern Turkey. It's a traditional Turkish dish known for its spicy and flavorful minced meat, usually lamb, mixed with various spices and herbs. It dates back centuries and is often grilled over open flames, giving it a smoky aroma. It’s commonly served with flatbread, grilled vegetables, and a side of sumac onions.
Ingredients:
1. 500g ground lamb (with some fat for juiciness)
2. 1 medium onion, finely grated
3. 2-3 cloves of garlic, minced
4. 1-2 teaspoons of red pepper flakes (adjust to taste)
5. 1 teaspoon ground cumin
6. Salt and black pepper to taste
7. Fresh parsley, chopped (optional for garnish)
Steps:
1. In a large bowl, combine the ground lamb, grated onion, minced garlic, red pepper flakes, cumin, salt, and black pepper.
2. Mix the ingredients thoroughly with your hands until well combined and the mixture is sticky.
3. Divide the mixture into portions and mold them onto flat skewers, shaping them into long, thin kebabs.
4. Preheat a grill to medium-high heat and cook the kebabs for about 4-5 minutes per side until they are nicely charred and cooked through.
6. Now serve and enjoy!
